Season with generous amount of salt and pepper, or a grill mix. Either bag with onion and garlic, or fresh thyme and butter.
Cook for 2-3h depending on thickness, at 145. We tried 140 and it was a little too medium. Sear in hot frying pan with oil, baste with butter.
